Chopped Broccoli Salad with Dried Peaches

This chopped broccoli salad is unlike many other broccoli salads because, well, the broccoli is finely chopped. And by fine, I mean fine. Like teeny weeny little pieces.

With this green mass and the add-in bits of colour from the dried peaches and red pepper, this salad is colourful and fresh-looking.

Personally, I love broccoli and I love dried peaches and (I may be a bit biased, but) I think the combo is super delicious. The dried peaches add a nice touch of sweetness, while the feta adds a bit of saltiness. And we all know from the abundant snacks available these days that sweet + salty is the ultimate tasty combo.

This recipe was inspired by a recipe my cousin sent me, which his aunt makes. However, my add-ins are very different from hers, and I steam the broccoli slightly because I prefer the taste and texture. But I must give credit where credit is due, because nowhere else have I ever seen a recipe for such a salad!

I love making this salad as a little change from the normal salad with lettuce as a base. It’s something different and a lovely change. I hope you’ll think so too after making it.

How to Make the Chopped Broccoli Salad

This salad is very easy to make. Don’t believe me? Just keep reading.

First, you roughly chop up the broccoli then pulverize it in a food processor until it’s in small pieces. Add the broccoli, water and salt to a microwave-safe bowl and cover with a microwave cover or plate. Microwave for 1 minute, stir, then microwave for another minute. Place the bowl in a water bath to cool it down, then transfer it to the fridge.

Whilst the broccoli is cooling, roast the sunflower seeds in a pan and then put them aside to cool down as well.

Now, prepare the dressing by mixing together the lemon juice, mayonnaise, and yoghurt in a small bowl.

Once the broccoli is cool, stir in the dressing, dried peaches, red pepper, and feta and mix until well combined. Lastly, sprinkle over the sunflower seeds as the final little flourish.

You can serve the salad with anything. Too ambiguous? I think it’s great served as a side at a braai/barbeque or as one of your homemade pita bread fillings.

Ingredients

  • 1 head of broccoli
  • 2T water
  • Pinch of salt
  • 3T sunflower seeds
  • 1 tsp lemon juice
  • 1T mayonnaise
  • 3T double cream plain yoghurt
  • 4 dried peaches, chopped (about ⅓ cup)
  • ½ red pepper, chopped (about ⅓ cup)
  • ½ round feta, chopped

Notes

Some other nice additions to the salad include chopped up crispy bacon, red onion, dates, and apple.
