Chia Pudding Overnight Oats – Blueberry & Banana

Chia pudding and overnight oats…two of my favourite breakfasts combined into one elegant glass. 

If you’re looking to start off your day with BIG positive vibes, this beautifully layered brekkie is for you. 

Not only is it absolutely scrumptious, but it’s healthy and nutritious as well!

Chia seeds are high in fiber, minerals, antioxidants, and contain more omega-3 fatty acids than salmon!

And oats- well they seem to have a million benefits…that I’m not going to get into now, because our mothers and grandmothers have told us to eat them enough times, I’m sure!

What could be better than a combo of these two healthy foods, with only blueberries and banana as sweeteners?

Be ready to be blown away by your new favorite breakfast!

One of the best things about this breakfast is that you just grab it out of the fridge in the morning, top it with some yogurt and fresh fruit if you want to, and tuck right in. 

With minimal effort, you’ll be feasting like a king (or queen!). 

Honestly, it should be illegal for something so good to be so easy to make!

Another great thing is you can make a few at a go (the recipe is totally “multipliable”) and have them for the next couple of days.

How to Make the Chia Pudding

I would start making the chia pudding in the evening. Give yourself at least an hour before your bedtime so that the chia pudding has a chance to firm up in the fridge before you add the overnight oats. 

I used two pretty glasses for it, because it just felt really elegant and looked beautiful. Another nice option is glass jars, but bowls or a simple container will also get the job done.

To make the chia pudding, divide the blueberries between the two glasses and squish them with a fork.

Next, mix together the milk and chia seeds well (you shouldn’t have lumps), then pour the mixture over the squished blueberries.

Pop those glasses, covered with cling film, in the fridge. Leave them there until they have gelled up slightly, and will support the overnight oats, about 1-2 hours (you want it to be semi firmish).

How to make the Overnight Oats

Again you’ll start off with some mashing. Use a fork to mash up the banana in a breakfast bowl. 

Add the oats, milk, vanilla, cinnamon, and salt and give it a good ol’ mix-y mix. 

Divide the oat mixture between the two glasses, cover them up, put them back in the fridge, and…wish them a good night!

Serving & Storing the Chia Pudding Overnight Oats

The following morning those two glasses of yumminess will be ready to devour.

Obviously, it’ll be delish just as it is, but if you want to go the extra mile and make it look and taste absolutely phenomenal, you can top it off with a few extra bits and bobs.

Some of my favourite extras are yogurt, fresh fruit (I used more blueberries and banana), and flaked/dessicated coconut.

Go crazy!

And then go even crazier when you actually try some of that deliciousness!

As mentioned above, you can make them ahead for a couple of days, but don’t leave it in the fridge for too long, or the oats may become slimy.

Ingredients

  • Chia Pudding
  • ½ cup blueberries
  • 3T chia seeds
  • ¾ cup milk
  • Overnight Oats
  • ¾ cup rolled oats
  • ¾ cup milk
  • 1 tsp vanilla essence
  • Pinch cinnamon
  • Pinch salt
  • 1 banana
  • Optional Extras
  • Handful of blueberries
  • 1 banana, sliced
  • 2 large spoonfuls of plain yogurt
  • Flaked/Dessicated Coconut

Instructions

Blueberry Chia Pudding

Divide the blueberries among two glasses and squish them slightly using a fork.

Mix the milk and chia seeds together well, then pour into the two glasses, dividing evenly.

Cover the glasses with clingfilm and place them into the fridge for 1-2 hours.

Overnight Oats

Once the chia pudding has been in the fridge for an hour or two and gelled up a bit, you can start the overnight oats.

In a breakfast bowl, mash the banana using a fork. Mix in the rolled oats, milk, vanilla essence, cinnamon, and salt.

Divide the mixture between the two glasses then place them back into the fridge for a few hours, preferably overnight. When they are ready there won’t be any runniness; the oats and chia seeds should have absorbed most of the milk.

Serving

The following morning (or whenever you have it) top with whatever you like...then enjoy! I have given some optional topping ideas, but feel free to get creative.

Notes

Don't keep them in the fridge for longer than 3 days, as the oats may go slimy. You can also make them in jars, or simply in a bowl or container.
