Apple and Cinnamon Granola – Easy & Delicious

June 6, 2021
Baked apple & cinnamon granola

Apple and cinnamon are best buddies. Absolutely delicious together. Do I even have to tell you that this granola is a real winner?

A combination of all the best, I’ve kept this granola simple (in comparison to my last recipe!). It’s easy to make, and very easy to eat!

The apples add a lovely sweetness so that you don’t have to add a whole lot of honey. The amount of honey in this recipe can even be lowered, but I’ve kept it as is because my mom likes it a bit sweeter!

The great thing about this granola is it’s really hard to mess up (unless you burn it). That means you can make a huge tray and have brekkie sorted for the next few weeks!

You can also multiply or divide the recipe according to how much granola you want. It’s so flexible!

How to Make the Apple & Cinnamon Granola

This is, of course, an apple cinnamon granola, so you will need some apples! I recommend using a sweet variety of apple (I used top red), but using a tarter variety is possible (I have made it with pink lady before – you may just need to adjust the honey).

Start off by blending the apple in a food processor until it is broken up into little chunks. Add the banana and process it just until it forms a chunky paste with the apple.

If you don’t have a food processor, it also works to grate the apple finely and mash the banana with a fork.

Place the fruit mush into a medium bowl and mix in the sunflower oil, honey, vanilla essence, salt, and cinnamon. Feel free to adjust the quantities of these ingredients according to your personal tastes.

Wet ingredients all mixed together and ready to add to dry ingredients

In a large bowl, stir together the oats, almonds, and seeds. You can definitely use different nuts and seeds to the ones I used! For this recipe, I used a mixture of sesame and chia seeds, but normally I use pumpkin, sesame, and linseeds.

Now, pour the wet mixture into the dry mixture and stir everything well. The dry ingredients should be evenly coated. Spread the mixture evenly onto the baking tray and place it into the oven.

Every 10-15 minutes (or when the edges turn golden-brown) remove the tray and stir the granola. Once you’ve baked granola a few times you should also be able to tell when to stir by the toasty, nutty smell that fills the air.

It will take about 45 minutes to fully cook. You’ll know it’s done when you stir the granola and there is no colour variation – the whole thing is golden.

Allow the granola to cool completely in the baking tray before storing it.

Serving & Storing the Granola

How to store and serve apple & cinnamon granola

Once the granola has cooled completely, you can spoon it into a large jar or airtight container. It will keep well for a couple of weeks.

I love to have granola for breakfast with fruit, yoghurt, and milk. When I first told my best friend about that, she thought I was crazy having both milk and yoghurt. Now she’s hooked!

Granola also makes a great snack or even dessert. It’s also great as a crunchy topping for a smoothie bowl.

So delicious and so versatile. What’s not to love about this granola?

  • ½ cup seeds - optional (I used sesame and chia seeds)

Instructions

1

Preheat oven to 130°C. Lightly grease a large baking tray.

2

Blend the apple in a food processor until it is broken up into little chunks. Add the banana and process it just until it forms a chunky paste with the apple. Alternatively, you can grate the apple, and mash the banana with a fork.

3

Place the fruit mixture into a medium bowl and mix in the sunflower oil, honey, vanilla essence, salt, and cinnamon.

4

In a large bowl, stir together the oats, almonds, and seeds. Pour in the wet mixture and mix everything well, so that all the dry ingredients are coated.

5

Spread the mixture evenly onto the baking tray and place it into the oven. Every 10-15 minutes (or when the edges turn golden-brown) remove the tray and stir the granola. It will take about 45 minutes to fully cook. You’ll know it’s done when you stir the granola and there is no colour variation - the whole thing is golden.

6

Allow the granola to cool completely in the baking tray, then spoon it into an airtight container, where it will keep for a few weeks.
