Start off by removing the papaya skin using a knife. Next, halve it lengthwise and remove the seeds. You can use one small papaya, or half a larger one.
Next, slice the papaya thinly crosswise, then arrange prettily on a platter or in a dish.
Toast the sunflower seeds in a pan over medium heat until lightly browned. This will take about 5 minutes.
With the heat still on, add the honey and mix with the seeds. It will bubble up, kind of like you’re caramelizing the seeds.
Lastly, mix in the lemon juice, and turn off the heat. Pour this seed mixture over the papaya immediately, trying to spread it as evenly as possible.
