Pumpkin pie oatmeal is a great way to get veggies in, first thing in the morning!
Lately, my mom has been making green smoothies with spinach and other greens from our garden.
With my pumpkin oatmeal and my green smoothie, I felt like quite the health queen this morning!
I love oats in any form, and I felt sure that the leftover boiled pumpkin in the fridge could make a killer breakfast. I was thinking pumpkin pie, but healthy and breakfast-friendly.

How to Make the Pumpkin Oatmeal
Making the pumpkin oatmeal is as easy as one-two-three. Literally, there are only 3 steps in this recipe!
To start with, mash up the banana and the boiled pumpkin in a bowl until more or less lump-free. You could also blend it to get it super smooth.
The banana adds sweetness, but you could leave it out if you’re not a banana fan. You could add some brown sugar to the oats whilst cooking, but I prefer to let people add their sweeteners themselves!
Now, it’s time to get cooking. To a small pot over medium heat, add the mashed pumpkin and banana, rolled oats, boiling water, and milk.
Once this mixture boils, turn the heat right down and stir in the salt, cinnamon, nutmeg, black pepper, and mixed spice. You can add more or less of these ingredients based on your preferred taste.
Simmer, partially covered, until your desired consistency is reached. I like it pretty thick (yes, a concrete sort of consistency) so I cook it for a bit longer.
Serving & Storing
One of the best parts about having oatmeal is going crazy with the toppings! I know some people like it with just some sugar/honey and milk, but here are some ideas for a bit more excitement!
- Nut butter (my favourite!)
- Toasted nuts or seeds
- Chopped dates or other dried fruit
- Cocoa nibs or chocolate chips
- Toasted coconut flakes
- Cream instead of milk for more decadence
This pumpkin oatmeal is best fresh, but you can refrigerate any leftovers and heat them up in the microwave the following morning.
A spiced oatmeal that makes a great healthy breakfast option. Mash up the banana in a bowl with a fork. Add the pumpkin and mash it with the fork until no large lumps remain.
