This delumpcious Waldorf salad really shook up the salad scene in my home.
We are creatures of habit, rotating between green salad and coleslaw, and occasionally spicing it up with carrot salad or couscous salad. That is, until this Waldorf salad entered the scene.
To be perfectly accurate, it’s not an authentic Waldorf salad, because it doesn’t have celery or walnuts. But I think it’s perfect. Crunchy almonds replace the walnuts, and the celery is just gone. Because who likes celery anyway? Btw, if you like celery, (1) I hope I haven’t offended you and (2) you’re free to add celery.
A wonderful mixture of crunchy, savoury, and sweet, this fresh Waldorf salad might just become a regular for you, too.
How to Make this Waldorf Salad
This Waldorf salad can be whipped up in a flash. As I believe should be true of all salads.
The most time-consuming bit is probably chopping your cabbage, grapes, apples, and almonds to the right size, then adding them to a medium-sized bowl along with the raisins.
After that, you make the dressing. This simply requires you to stir together the mayonnaise, lemon juice, and honey, then add salt and pepper to taste. I recommend using creamy, rather than tangy, mayonnaise, to avoid overpowering the delicate flavors and sweetness of the salad ingredients.
When you’re ready to serve, simply pour the dressing into the salad and stir well to mix it in. Enjoy!
If you have any leftovers, I think they would keep well in the fridge for a few days. I can’t say for certain, though, because we’ve never had any leftovers!
