Something that annoys me with most brownie recipes is all the chocolate you have to add. I don’t know why, but using chocolate as an ingredient always puts me off. Like, you’re telling me I need to go to the shops, buy chocolate, resist eating it, and then just melt it to use as an ingredient?!
Okay, maybe it’s a tad bit of an irrational annoyance on my part, but it’s part of the reason why I love this recipe so much. There’s no chocolate in it, only an actual TONNE of cocoa powder!
These Chocolate Brownies’ Story
My aunt gave me this recipe when I was in Grade 3 or so. It’s one of the first things I ever learnt to bake. Even though it’s so easy, I managed to turn it into one of My Greatest Baking Failures to this day.
The recipe was handwritten really quickly by my aunt, and she made a mistake and wrote 1/2 cup of salt instead of 1/2 teaspoon. Being rather inexperienced in the world of baking and spicing, I followed the recipe to a tee – and that’s the one baking disaster that’s been so bad that I had to chuck it!
Mistake aside, this soon became my favourite recipe. Not only is it easy but (man!) are these brownies scrumptious. So chocolatey, so fudgy…basically pure heaven.
I got a little addicted to them and took a break for a while. However, this past weekend I made them to sell at a market and rediscovered how flippin’ good they are.
Just be warned – they’re not the best thing for you, yet very addicting. Make sure you have loads of people to share them with otherwise you will quickly finish them all by yourself! Another great thing about this recipe is that you can very easily cut it in half with exactly the same results. Enjoy!
These fudgy chocolate brownies can easily be whipped up in a flash. No chocolate is required, you only need cocoa powder for the world's best brownies! Preheat the oven to 165 °C. Grease a medium-sized rectangular dish, or line it with baking paper. Whisk together the melted butter, brown sugar, and cocoa powder. Whisk in the salt, vanilla essence, and eggs. Stir in the flour and baking powder until just combined. Scrape this mixture into the prepared dish and smooth it out evenly. Bake for about 25-30 minutes, or just until the batter is no longer wobbly. A skewer should come out mostly clean. Allow the brownies to cool on a wire rack before cutting to the desired size and storing them in an airtight container. Halve the recipe to make a small tray of brownies. But be warned, they disappear fast!
